Chipotle pilots food-safety platform with Palantir

Chipotle confirmed a pilot with Palantir in a September 17 report from Nation’s Restaurant News, describing a platform intended to consolidate food-safety risk information across its restaurants and help teams choose where to follow up.

WIRED reported September 16 that screenshots showed a system on Palantir’s Foundry platform that appeared to combine inspection scores, pest incidents and employee illnesses into a restaurant risk score.

Chipotle’s current program documentation describes existing checks and records. It does not specify which of them connect to the pilot.

The senior manager on each shift serves as food-safety leader, responsible for reviewing daily hazard-control logs across 13 critical control points. Those checks are intended to identify food-safety hazards and prompt corrective action.

The leader also documents wellness checks for employees as they begin work. Company policy requires each worker to state that they are healthy to work and free of specified symptoms.

Field leaders review each restaurant monthly with software that shows task completion. At each visit to a restaurant, field leaders also assess the location against Chipotle’s food-safety standards. EcoSure, Ecolab’s audit division, conducts quarterly food-safety audits at Chipotle restaurants in the U.S. and Canada.

For ingredient tracking, staff scan barcodes on refrigerated deliveries as food moves from suppliers through distribution centers to restaurants. Chipotle says the records let it trace individual lots through the supply chain.

Government inspections receive a centralized review, with results shared with operations teams. Chipotle says it can send internal food-safety teams to help restaurants with low scores or repeated violations.
